Our oil has an intense golden-yellow colour with delicate green nuances; to the nose it is strong and full of character, with distinct notes of artichoke and thistle and elegant scents of aromatic herbs, especially parsley and mint. To the taste it has hints of chicory, lettuce and almonds. It is best described as bitter and spicy, strong and harmonious.
It is ideal with appetizers of tuna, octopus carpaccio, mushroom salad and red lettuce, lentil soup, pasta with meat sauce, grilled swordfish, game and medium-aged cheeses.
